Ingredients

  • 6 raw prawns (shrimp)-peeled and deveined (300 g.)
  • 2 cups water (chicken stock) (500 ml.)
  • 1-2 fresh red or green chillies-bruised
  • 3-4 kaffir lime leaves-torn into four.
  • 2 stalk lemon grass-cut into 2 inch (5 cm) long pieces and bruised .
  • 5-6 coriander leave to garnish.
  • 100 g(1 cup, 3 ½ oz) straw mushroom.

Seasoning

  • 2 tablespoons freshly squeezed lime.
  • 1 ½ tablespoon fish sauce.

 

Method

  • Bring water (chicken stock) to boil over medium heat.
  • Add lemon grass, straw mushroom, chillies, fish sauce, prawns, kaffir lime leaves and stir to combine. Sprinkled with the coriander leaves.
